The following article is based on the supply chain research of Mr Ma Guojun, DBA of IAE Nice Université Cote d’Azur.
Based on the supply chain of the catering industry, in the process of running a business related to the supply chain, some factors have an impact on the efficiency of the supply chain. These factors can be certainly improved through certain optimisation. Hoping to optimise the supply chain through the widely-used operation mode of the supply-hub platform in manufacturing, reduce the occurrence of problems and improve the efficiency of the entire supply chain.
Four main steps of this study:
First, it analyses the current catering supply chain in China, summarises its characteristics and finds out problems. By using a coordinated supply chain in response to such feature that many caterers are in small scale to lower uncertainty and improve standardisation. In order to improve the synergy of the supply chain and the overall response speed and operational efficiency, horizontal synergy and vertical synergy are included.
Second, finding that the currently widely-used supply-hub platform in manufacturing is also applicable to the catering supply chain which can increase the response speed and matching of the supply chain. By focusing on operators of the supply-hub platform, synergistic mode of operation, analyse the coordination mechanism, influencing factors and characteristics are all constructed.
Third, the cost structure includes production, storage, distribution and damaged goods etc. are considered at this step. A collaborative decision model of two catering supply chains is constructed which contents two models: the collective decision-making and the decentralised decision-making of operators. The result turns out that the collective decision is more advantageous than the decentralised decision.
Fourth, all findings from the above three steps implement into the real group company -YMNL group to get the results as follows.
Results based on YMNL group
First of all, the model realises the integration of all entities involved in the supply chain of the YMNL group, optimise the configuration of business units, each node and unit can grasp the supply chain information of the enterprise in real-time, this provides better service and management for the enterprise.
Second, the model can help the company reduce operating and procurement costs. Analysing the operating data in real-time reduces the cost of information transmission.
Third, the model can help the YMNL group maintain a good relationship with its suppliers and customers, to allow customers and businesses to communicate well. Both parties share information in a timely manner and improve the level of cooperation.
Fourth, the model builds an information-sharing system based on an information platform, avoiding distortion of information and remaining efficient and accurate delivery.
If the catering enterprises reach a certain scale of development, the main competition among enterprises will become that of the quality and efficiency of business operations. With the help of the model of this study, YMNL group catering information management service platform can gain a certain favourable position in the future competition.
The synergy between the upstream and downstream of the supply chain is not simple, which requires that the supply chain should have a very fast response speed. Based on the research and analysis of the operation mode of the supply-hub platform and the operation characteristics of the catering supply chain, it is found that the two have commonalities. Therefore, the application of the supply-hub platform mode in the catering industry can make up for the defects in the current supply chain operation process, keep the cost of the catering supply chain at a low level, thus achieving a significant lift in overall operational efficiency.
